Project Chef is the brainchild of award-winning chef Martyn Ridings. Established in July 2020, unwavering times, an artistic and creative endeavour emerged, one Project Chef. Specialising in creating unique fine dining experiences, in the comfort of your own home.

Martyn Ridings

Martyn's passion for food ignited when he was just 10 years old. By chance, he had the opportunity to taste the culinary creations of one of Australia's top chefs, who happened to be the father of a schoolmate. The captivating flavors and aromas left a lasting impression on him, inspiring his desire to become a cook.

At 15, Martyn commenced his culinary journey at Il Centro Restaurant, located in the heart of Brisbane's Riverside CBD. This bustling establishment specialized in exquisite Italian cuisine served in an elegant setting. It was here that Martyn honed his culinary skills, which eventually led him to a prestigious two Michelin star kitchen in the south of France. This experience exposed him to exceptional ingredients and a genuine farm-to-table ethos, fueling his passion for the industry and a commitment to using local produce.

Upon returning to Australia, Martyn joined the esteemed Stokehouse restaurant in Melbourne, aligning with its dedication to quality cooking and ingredients. This period marked significant growth in his culinary development.

Martyn's journey then took him back to Brisbane, where he played a pivotal role in the launch of The Wolfe, a charming restaurant in East Brisbane. Within a year, Martyn's leadership earned the establishment a coveted hat in the good food guide. The dynamic environment, marked by monthly menu changes, fostered boundless creative exploration.

Eventually, Martyn realized his dream of moving to Byron Bay, embracing the lifestyle he had long envisioned. His latest endeavor, Loft Byron Bay, showcased his talents as the Executive Chef, overseeing an expansive menu for the spacious restaurant on Jonson Street.

​

Driven by his love for fine dining, Martyn transitioned to private dining, a platform that allows him to showcase his culinary artistry while patrons enjoy memorable evenings with loved ones.
